Everyone has their own preferences as far as length, weight and balance. After investing in German knives I have seen the light,  Japanese steel is the only one for me now! The company that has caught my heart is &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;Kikuichi&lt;/span&gt;, manufacturer of high quality carbon-steel knives. Mine have french style handles and come with wood carrying cases to protect the blades. For a cook it is damn near heaven on earth. Recently I traveled to &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;Europe&lt;/span&gt; for the first time and during a day in Athens stumbled across the most amazing seafood market I have every laid eyes on. I was yearning for nothing more than a couple hours in the kitchen and some friends to cook for.  Easy enough to fix, a few hours later, lots of stains on my jeans and voila! I felt right at home again. Amazing how a little time off brings the passion back.  It's getting too hot to have the oven on except to make a grilled cheese or bacon or both, hence the following menu and what could be better than Ontario &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_0"&gt;strawberries&lt;/span&gt; &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_7"&gt;Noir&lt;/span&gt;&lt;/div&gt;&lt;div style="text-align: left;"&gt;Lay out Beet slices, toss Arugula with &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_8"&gt;Vinegrette&lt;/span&gt; on gelatin to create jello&lt;/div&gt;&lt;div&gt;Pick Parsley off stems and &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_19"&gt;chiffonade&lt;/span&gt;&lt;/div&gt;&lt;div&gt;Shred Ham and mix with Dijon, Parsley and Pepper to taste&lt;/div&gt;&lt;div&gt;Press Ham mixture into a Terrine mold or loaf pan lined with plastic wrap and pour Stock over to cover, &lt;span class="blsp-spelling-corrected" id="SPELLING_ERROR_20"&gt;chill&lt;/span&gt; Simple, straight forward and delicious.&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Ingredients (makes 8 bowls)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;2 large celery roots peeled and roughly diced&lt;/div&gt;&lt;div&gt;4 ribs celery diced&lt;/div&gt;&lt;div&gt;1 onion diced&lt;/div&gt;&lt;div&gt;1 bulb garlic&lt;/div&gt;&lt;div&gt;1/4 cup 35% cream&lt;/div&gt;&lt;div&gt;salt&lt;/div&gt;&lt;div&gt;olive oil&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Garnish(optional)&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;celery salt&lt;/div&gt;&lt;div&gt;1/2 cup finely diced celery heart&lt;/div&gt;&lt;div&gt;celery leaves chiffonade&lt;/div&gt;&lt;div&gt;crumbled goat cheese&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;Method:&lt;/div&gt;&lt;div&gt;Preheat the oven to 350. Cut the top off the bulb of garlic, drizzle with a touch of olive oil, wrap with foil and place in oven for 1 1/2 hours until soft and golden brown.&lt;/div&gt;&lt;div&gt;&lt;br /&gt;&lt;/div&gt;&lt;div&gt;In a large pot heat up some olive oil and cook the celery and onions over medium heat with some salt until soft. Add the diced celery root, 35% cream and cover with water. Squeeze in the roasted garlic, bring to a boil, then turn down to a simmer and cook until celery root is soft 20-30 min. Puree using a hand blender in the pot or transfer to a blender in batches (only fill blender halfway with hot stuff). Taste and add salt if needed.
